Banana KEEN Balls

Ingredients:
1 ripe banana
1 ½ cups Old-Fashioned Rolled Oats
½ cup chopped pecans
1 cup KEEN Coconut Cocoa mix
½ cup Peanut Butter (Unsalted) - or almond butter
⅓ cup Honey
¼ teaspoon Salt
⅓ cup Mini Chocolate Chips

Directions:
1. Peel the banana, mash it with a fork on a plate, and pack the mashed banana in a measuring cup to measure 1/2 cup. This prevents a batter that is too wet or too dry at the end.

2. Combine and mix all ingredients until the batter is sticky and evenly combined. The batter is ready when it’s easy to squeeze by hand, and it holds together.

3. If the dough is too sticky, fold in 1-2 tablespoons of rolled oats. If too dry, add some water, one tablespoon at a time.

4. Fold in chocolate chips and stir to incorporate.

5. Slightly wet your hand with water to prevent the batter from sticking to your hands.

6. Roll about 1 1/2 tablespoons of batter into a ball, place on a plate, and repeat until no more batter is left.

7. Refrigerate until balls firm up (1-2 hours).
