Ingredients:
1 bag KEEN Apple Cinnamon mix
1 ½ cup rolled oats
2 cups diced apples (royal gala used)
2 large eggs
2 tbsp butter melted
2/3 cup packed brown sugar
1 cup milk (can use non-dairy)
1 tsp vanilla extract
2 tbsp ground cinnamon
2 tsp baking powder
½ tsp salt
Directions:
1. Preheat oven to 350 degrees
2. Line muffin tins (12) with muffin liners that are sprayed with cooking spray
3. In a large mixing bowl, add brown sugar, eggs, salted butter and whisk until smooth. Whisk in milk and vanilla and when that is smooth add in apples
4. In another bowl, combine KEEN apple cinnamon mix, rolled oats, cinnamon, salt and baking powder and mix until combined. Add wet ingredients to dry and stir to combine
5. Fill muffin cups to just below the top. As you scoop be sure to store the ingredients so you get an even mix of oats and liquid in each muffin
6. Bake for 30-35 min. Cool for at least 5 minutes before serving
7. Cool completely before storing in sealed container.
