KEEN Coconut Cocoa Rocky Road Bars

Ingredients:
1 bag KEEN Coconut Cocoa mix  
½ cup almond butter  
⅓ cup yogurt  
3 tablespoon honey    
1 cup of mini marshmallows (cut in half)
½ cup mini chocolate chips
½ cup finely chopped almonds

Directions:
1. Pour the entire bag of mix into a medium bowl

2. Add almond butter, yogurt, honey, mini marshmallows, mini chocolate chips and chopped almonds

3. Save a handful of mini marshmallows and mini chocolate chips for topping

4. Mix well with a spoon

5. Pour contents into 8” x 8” square baking or round dish with parchment  

6. Press mixture down with spatula, top with remaining mini marshmallows and mini chocolate chips

7. Chill in refrigerator for at least 30 minutes

8. Cut into bars and serve

9. Leftovers must be refrigerated (≤ 4°C) in airtight container. Consume within 2 weeks. Can also be frozen and saved for later.
