This moist and delicious loaf is loaded with fruit and yogurt for a filling and wholesome breakfast or snack. Enjoy a slice (or two!) with your morning coffee or tea, or when you need a sweet pick-me-up treat!

Ingredients
1 pkg (255 g) Keen No Bake Energy Bite Mix Apple Cinnamon
250 mL (1 cup) gluten-free all-purpose flour
7 mL (1 ½ tsp) baking powder
7 mL (1 ½ tsp) baking soda
2 eggs
250 mL (1 cup) plain Greek yogurt
75 mL (1/3 cup) melted butter
75 mL (1/3 cup) pure maple syrup
1 fresh pear, peeled, cored, and chopped
5 mL (1 tsp) vanilla extract
125 mL (½ cup) chopped walnuts
Directions
1. Preheat oven to 350°F (180°C). Line loaf pan with parchment paper, with paper overhanging sides.
2. In medium bowl, whisk together Keen No Bake Energy Bite Mix Apple Cinnamon, gluten-free flour, baking powder and baking soda.
3. In large bowl, whisk together eggs, yogurt, melted butter and maple syrup. Fold in flour mixture until combined. Fold in pear and vanilla. Scrape batter into prepared pan and sprinkle with walnuts.
4. Bake for 40 to 50 minutes or until golden and a tester comes out clean when inserted into centre of loaf. Let cool slightly before slicing and serving.
Tip: Substitute canned pear for fresh pear if desired. Pat dry before using.
