Ingredients
1 pkg (255 g) Keen No Bake Energy Bite Mix Apple Cinnamon
1 egg, beaten
150 mL (2/3 cup) vanilla yogurt
125 mL (½ cup) pure pumpkin purée
60 mL (¼ cup) almond butter
60 mL (¼ cup) butter, melted
45 mL (3 tbsp) gluten-free all-purpose flour
2 mL (½ tsp) baking soda
125 mL (½ cup) chopped mixed nuts (such as pecans, walnuts and almonds), chopped
60 mL (¼ cup) dried cranberries
Directions
1. In medium bowl, stir together Keen No Bake Energy Bite Mix Apple Cinnamon, egg, yogurt, pumpkin purée, almond butter, butter, gluten-free flour and baking soda until combined. Fold in nuts and cranberries. Portion dough into 12 equal rounds and press to lightly flatten.
2. Line air-fryer basket with parchment paper and preheat to 350°F (180°C).
3. Arrange 6 cookies in basket.
4. Bake for 8 to 10 minutes or until golden and tender. Transfer to wire rack to cool. Repeat with remaining cookies.
Tip: Cookies can be stored in an airtight container at room temperature for up to 1 week or frozen for up to 3 months (thaw before serving).
