Ingredients
Crust:
1 package of Keen No Bake Energy Bite Mix - Apple Cinnamon
½ cup of peanut butter
½ cup of greek yogurt
1 tbsp of milk
Filling:
3 cups of diced apples (approx 2 medium sized apples)
1 tbsp of lemon juice
2 tbsp of butter
2 tbsp of brown sugar
1 tbsp of granulated sugar
½ tsp of cinnamon
¼ tsp of nutmeg
¼ tsp of fine sea salt
1 tbsp of all purpose flour
Crumble topping:
⅓ cup of all purpose flour
2 tbsp of brown sugar
2 tbsp of granulated sugar
½ tsp of cinnamon
¼ tsp of nutmeg
¼ tsp of fine sea salt
¼ cup of butter (room temperature)
Instructions
Crust:
1. Grease 6 mini tart tins and set aside.
2. Combine Apple Cinnamon mix, peanut butter, greek yogurt and milk in a medium sized bowl and stir until fully incorporated. Divide into 6 portions. Press into the shape of the tart pan, ensuring the bottom and sides are an even thickness.
3. Refrigerate the crusts while you make the filling and crumble. Preheat oven to 325°F.
Filling:
1. Dice 2 medium sized apples into 1cm cubes, mix with lemon juice and set aside.
2. In a medium saucepan, melt butter over medium low heat.
3. Add in diced apples, both sugars, cinnamon, nutmeg and salt and cook until the apples have slightly softened, approx. 5 minutes. Add in flour and stir until combined. Remove from heat and set aside.
Crumble Topping:
1. Stir flour, sugars, cinnamon, nutmeg and salt until combined. Add in butter and mix with a fork until crumbly.
2. Place chilled tart pans on a baking sheet and fill with the apple mixture followed by the crumble topping. Bake for 15 minutes or until lightly golden.
3. Cool on a wire rack and enjoy!
