Makes: 16 pumpkin cheesecake bites
Ingredients:
1 package of KEEN No-Bake Energy Bite Mix - Apple Cinnamon
½ cup of pumpkin puree
½ cup of cream cheese (softened)
1 tsp of cinnamon powder
½ tsp of ginger powder
¼ tsp of nutmeg
3 tbsp of honey
4 drops of orange food colouring (optional)
¾ cup of orange sanding sugar
8 pretzel sticks (broken in half)
Instructions:
1. Combine a package of KEEN Apple Cinnamon Mix, pumpkin puree, cream cheese, cinnamon, ginger, nutmeg and honey and mix until thoroughly combined. Add in food colouring if using and mix until incorporated.
2. Divide the mixture into 16 even sized balls and refrigerate for 15-30 minutes until firm.
3. Once the mixture is firm, roll into smooth balls and coat in the orange sugar. Using the side of a fork, gently press the tyne making a curved indentation from the bottom to the top of the ball. Repeat around the entire side of the ball creating a pumpkin shape. Press the pretzel stick into the top center to replicate a stem. Repeat for remaining balls. Refrigerate for 15 minutes, plate and enjoy.
