Ingredients
• ½ cup oats
• 1 cup flour
• 1½ cup KEEN Apple Cinnamon Mix
• 2 tbsp chia seeds
• Zest of 1 orange and ¼ cup fresh orange juice
• 1 tsp baking powder
• ¼ tsp cinnamon
• 1/3 cup maple syrup or honey
• 2 large eggs
• ¾ cup dairy or dairy alternative
• ¼ cup melted butter
• 1 tsp vanilla
• 1 cup fresh or dried cranberries
Directions
1. Preheat oven to 350°F and grease 9” round pan
2. In a bowl whisk together KEEN Apple Cinnamon Mix, oats, flour, chia seeds, baking powder, cinnamon and orange zest
3. In another bowl whisk orange juice, maple syrup, eggs, milk, melted butter and vanilla extract until smooth
4. Gradually mix wet ingredients into dry ingredients. Fold in cranberries
5. Pour batter into prepared pan and bake for 25-35 minutes or until toothpick inserted in the center comes out clean
6. Let cake cool for at least 10 minutes before slicing. Garnish with extra orange zest or light drizzle of honey for extra flavour.
