Fudgy Coconut Cocoa Brownies

Chocolate and coconut make a dynamic duo — especially in these fudgy brownies! They’re decadent enough to be served for dessert (accompanied with a scoop of ice cream) but also sate as an afternoon or late-night snack!

Ingredients

1 pkg (255 g) Keen No Bake Energy Bite Mix Coconut Cocoa
125 mL (½ cup) gluten-free all-purpose flour
5 mL (1 tsp) cornstarch
2 eggs
250 mL (1 cup) chopped dark chocolate, melted
125 mL (½ cup) melted butter
60 mL (¼ cup) pure maple syrup

 

Directions

1. Preheat oven to 350°F (180°C). Line 20-cm (8-inch) square baking pan with parchment paper, with paper overhanging sides.

2. In medium bowl, whisk together Keen No Bake Energy Bite Mix Coconut Cocoa, gluten-free flour and cornstarch.

3. In large bowl, whisk together eggs, melted chocolate, melted butter and maple syrup. Fold in flour mixture until just combined. Scrape into prepared baking dish.

4. Bake for 18 to 20 minutes or until set around edges but still soft and slightly jiggly in centre. Let cool completely before cutting.

 

Tip: For added texture and crunch, add shredded or shaved unsweetened coconut over top before baking. For added decadence, serve with a scoop of your favourite ice cream!
