KEEN Blondies

Ingredients
½ cup butter melted and cooled
1 cup light brown sugar
1 egg
1 teaspoon vanilla extract
 ¾ cups all-purpose flour
½ cup KEEN Oat Chocolate Chip Mix
½ teaspoon baking powder
½ teaspoon salt
1 cup chopped candied easter egg chocolates

Directions
1. Preheat oven to 350°F.  Line an 8x8 inch baking pan with parchment and set aside

2. Melt butter in a small saucepan or in a microwavable bowl.  Allow butter to cool slightly for 3-5 minutes

3. Transfer the cooled butter to a medium mixing bowl add sugar, egg, and vanilla and whisk together until well combined

4. Add in flour and KEEN Oat Chocolate Chip Mix, baking powder and salt and mix using a spatula until the batter is thick with a few streaks of flour remaining.  Gently fold in 1 cup of chopped candied easter egg chocolates.  Do not overmix

5. Transfer batter to prepared pan and use spatula to press mixture into corners and level the top.  Add a few chopped candied chocolate eggs on top for decoration

6. Bake for 25-28 minutes depending on how chewy you want the center.  

7. Remove pan from oven.  Move to cooling rack.  Once cooled completely, lift out of pan and cut into squares 

8. Store in airtight container for up to 7 days, or up to 1 month in freezer
