KEEN Chocolate Peanut Butter Oat Bars

Ingredients
For the peanut butter oat base:
1 ½ cups creamy peanut butter
1/3 cup maple syrup or honey
¾ cup rolled oats
¾ cup KEEN Oat Chocolate Chip Mix
1 tsp vanilla extract

For the chocolate topping:
1 ½ cups chocolate chips (can also use semi sweet chips)
¼ cup creamy peanut butter

Directions
1. Line an 8x8 inch pan with parchment paper

2. To a microwave safe bowl, add peanut butter and microwave until melted.  Add maple syrup or honey, oats, KEEN Oat Chocolate Chip Mix, and vanilla and mix with spatula to combine.

3. Press the mixture evenly in the prepared pan

4. For the chocolate topping, in a medium bowl, combine chocolate chips with peanut butter and melt in the microwave (30 second increments) stirring in between until smooth 

5. Spread the chocolate all over the peanut butter layer, and add whatever toppings you wish (The video we used sprinkles and crushed pretzels)

6. Chill in fridge until firm (2-3 hours), then take it out and allow to sit for 15 min at room temperature. Cut into squares.

7. Keep these in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
