KEEN Sunrise Muffins

Ingredients
• 1 ½ cup KEEN Apple Cinnamon Mix
• 1 cup flour
• 1 cup sugar
• 2 tsp baking soda 
• 2 tsp cinnamon
• ¼ tsp salt
• 2 cups shredded carrots
• 1 medium apple, cored and shredded                       
• ½ cup raisins, ½ cup chopped walnuts, ½ cup flaked coconut, ¼ cup pepitas
• 1/3 cup applesauce
• 3 large eggs
• 1 cup vegetable oil
• 2 tsp vanilla extract

Directions
1. Preheat oven to 350*F and grease a standard 12 cup muffin tin or line with paper liners  

2. In a bowl whisk together KEEN Apple Cinnamon Mix, flour, sugar, baking soda, cinnamon and salt.  Stir in the shredded carrots, shredded apple, raisins, chopped walnuts, pepitas and coconut until all ingredients are evenly distributed 

3. In a separate bowl whisk together eggs, oil, applesauce and vanilla extract until smooth and fully incorporated 

4. Pour wet ingredients into dry ingredients. Stir gently until just combined.  Do not overmix as this can affect the muffins texture

5. Evenly divide batter among prepared muffin cups, filling to ¾ full. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean.
