Mini Cheesecake Tarts

Makes: 16-18 tarts

 

Ingredients
Crust:

1 package of Keen Oat Chocolate Chip Energy Bites Mix
½ cup (1 stick) of unsalted butter (melted and cooled)

Cheesecake Filling:
1 container of cottage cheese (500g)
1 block of cream cheese (250g)
2 large eggs
½ cup of granulated sugar
1 tsp of vanilla extract
Juice and zest of 2 lemons
Your favourite jam and fresh fruit for topping

 

Instructions:
1. Preheat the oven to 325°F. Line 2 muffin tins with muffin liners.

2. Crust:
In a medium bowl combine Keen Oat Chocolate Chip Energy Bites Mix with melted butter. Stir until fully incorporated. Place approx. 2 tbsp of mixture into each muffin liner. Firmly press the mixture until an even crust is formed. Place in the refrigerator while you prepare the filling.

3. Cheesecake Filling:
In a blender, combine cottage cheese, cream cheese, eggs, sugar, vanilla extract and lemon juice. Blend until completely smooth, approx. 3 minutes. Stir in lemon zest. Evenly fill your muffin liners approx. ¾ full. Bake for 40 minutes or until the cheesecakes are set, they should not look wet or jiggle.

4. Let cool on a wire rack. 

5. Once cool remove the liner and top with with your favourite jam and fresh fruit.
