KEEN Coconut Cocoa Tart

Creamy and rich, this tart is an elegant dessert that’s perfect for entertaining. Prepare this coconut-infused treat in advance to make serving as stress-free as possible!

1 pkg (255 g) Keen No Bake Energy Bite Mix Coconut Cocoa
60 mL (¼ cup) almond butter
45 mL (3 tbsp) milk
30 mL (2 tbsp) melted coconut oil
30 mL (2 tbsp) liquid honey
375 mL (1 ½ cups) chopped dark chocolate
250 mL (1 cup) coconut milk
10 mL (2 tsp) vanilla extract
45 mL (3 tbsp) toasted unsweetened shaved coconut, optional
45 mL (3 tbsp) edible flowers, optional



1. Lightly grease 20-cm (8-inch) round tart pan with removable base.

2. In medium bowl, stir together Keen No Bake Energy Bite Mix Coconut Cocoa, almond butter, milk, coconut oil and honey until combined. Press mixture evenly into prepared tart pan.

3. In small heavy-bottomed saucepan set over medium heat, stir together chocolate and coconut milk; cook, stirring occasionally, for 3 to 5 minutes or until smooth and melted. Stir in vanilla.

4. Pour chocolate mixture evenly over almond butter mixture. Refrigerate for at least 4 hours or up to overnight.

5. Sprinkle shaved coconut and edible flowers over top before serving, if desired.


Tip: Serve with coconut whipped cream, plant-based ice cream or scoop of plain yogurt if desired.
