Strawberries and Cream Oatmeal “Cakes”

A wholesome twist on the classic strawberry shortcake, these treats are easy to make and can be enjoyed for breakfast, dessert or as a snack!

1 pkg (270 g) Keen No Bake Energy Bite Mix Oat Chocolate Chip
125 mL (½ cup) almond butter
250 mL (1 cup) plain Greek yogurt, divided
60 mL (¼ cup) liquid honey, divided
125 mL (½ cup) sliced strawberries
60 mL (¼ cup) packed fresh mint leaves



1. In medium bowl, stir together Keen No Bake Energy Bite Mix Oat Chocolate Chip, almond butter, 75 mL (1/3 cup) yogurt and 30 mL (2 tbsp) honey. Form mixture into 6 even balls, then flatten into 1-cm (½-inch) thick rounds. Chill for at least 1 hour or until firm.

2. Spread remaining yogurt evenly over rounds. Top evenly with strawberries and drizzle with remaining honey. Garnish with mint.


Tip: Substitute strawberries with blueberries, raspberries and/or blackberries!
