Penguin Bites

Penguin Bites

Prep Time: 30 minutes
Chill Time: 1 hour (+ 2 hour standing time)
Total Time: 3 hours and 30 minutes 
Serves: 14

Ingredients:
1 package of Keen No Bake Energy Bite Mix - Oat Chocolate Chip
½ cup of peanut butter
⅓ cup of greek yogurt
¼ cup of honey

Coating:
1 cup of white candy melts
1 cup of black candy melts

Decorations:
14 mini orange candies
28 mini white candy stars

Materials:
14 - paper straws
1 styrofoam block
wooden toothpicks

Instructions:
1. In a medium bowl, combine oat chocolate chip mix, peanut butter, greek yogurt and honey. Stir until thoroughly combined. Divide into 14 sections and roll into an oblong ball. Refrigerate uncovered for 1 hour.

2. Melt your white candy melts according to the directions. Dip the tip of the paper straw, approx. ½” into your white coating and insert into the center of 1 Keen ball, pushing approx halfway through. Dip the entire ball into your coating and gently twirl and tap the straw to allow the excess coating to drip off. Set into your styrofoam and repeat for the remaining balls. Let sit at room temperature for 1 hour or until the white coating has completely set.

3. Melt your black candy melts according to the directions. Dip the back, top, left and right side, leaving a portion of the front white. Use a toothpick to bring down a tip from the top to form the point on the forehead of the penguin. Set back into your styrofoam and repeat for the remaining balls.

4Cut a toothpick in half, to get a flat tip. Lightly dip into the black candy melt and dot onto your penguins face to create the eyes. Dip a clean toothpick into the white candy melt to glue the nose and feet on.

5. Let your final penguin bites rest at room temperature for another hour to set and enjoy!
